Mom's Easy Meatloaf
This old-fashioned meatloaf is simple and easy to make. A hardy meatloaf with a topping that melts in your mouth.

- 2 lb ground hamburger
- 1.5 c old-fashioned oatmeal or crackers ( I always use oatmeal)
- 1.5 c milk
- 2 egg
- 2 tsp salt
- 1 tsp onion powder
- 1/2 tsp pepper
Topping:
- 1 c ketchup
- 1/4 th c brown sugar
- 2 tbsp mustard
Preheat your oven to 350 degrees Fahrenheit, and grease a 9 x 13-inch baking dish. In a mixing bowl combine the ground beef, oatmeal, milk, egg, salt, onion powder, and black pepper and mix well. I find a fork works well for this.
In a separate small bowl mix the ketchup, brown sugar, and yellow mustard.
Using a rubber spatula pat down the meatloaf mix in the bottom of the 9 x 13-inch baking dish. Using the same spatula spread on the topping over the meatloaf.
Bake for 40-50 minutes or until a meat thermometer reaches an internal temperature of 165 degrees Fahrenheit. Depending on the fat content of the meat you may see some shrinkage around the edge away from the pan.
