Chocolate Potato Cake 🥔 This cake was so good, m Chocolate Potato Cake 🥔 

This cake was so good, my kids loved it. Pretty hard to like chocolate cake you know 😁😉 I figured if carrots made such a good cake why not try another root vegetable. Potatoes are good in bread and donuts too. 

Ingredients:
1 cup cold mashed potatoes
2 cups all-purpose flour
1/4 cup instant jello vanilla pudding 
1 teaspoon baking soda
1 tablespoon baking powder
8 tablespoons (1 stick) butter softened
2 cups sugar
4 eggs
3/4 cup milk
2 teaspoon vanilla
1 teaspoon salt
Four 1-ounce squares unsweetened chocolate, melted 

Place all the ingredients, except the chocolate, in a large bowl. With an electric mixer set at low speed, mix until well blended, occasionally scraping the bowl with a spat-ula, then beat at medium speed for 4 minutes. 

Add the chocolate and blend thoroughly. 

Butter a 13-by-9-inch baking pan; pour in the batter and bake in a preheated 350°F oven for 45 minutes, or until a toothpick pushed into the center comes out clean. Or, bake in three 9-inch layers for 20 minutes, or until the toothpick comes out clean. 

Let stand for 10 minutes; remove from pan and cool the cake on a wire rack. (I left mine in the pan)

Topped it with Hershey's Frosting (Right off the cocoa container) 

2 and 2/3 cups powdered sugar
½ cup cocoa
1 tsp. vanilla
6 Tbsp. softened  butter 
1/3 cup milk
Mix together with a hand mixer and spread on cooled cake.

Banana Cake Roll 2/3 c ripe mashed banana (about Banana Cake Roll 

2/3 c ripe mashed banana (about 2 medium size bananas, it was 165 grams)
3 eggs 
1 tsp vanilla 
1 cup sugar 
1 tsp cinnamon 
1 tap baking soda
1/2 tsp salt
3/4 c all-purpose flour 

Cream Cheese Filling
8 oz cream cheese
2 TB butter
1 c powdered sugar
Add a little tiny amount of milk if it's to thick to spread. 

Instructions 

• Grease a jelly roll pan (11 inches x 15 inches) and line it with parchment paper. Grease the parchment paper too.
• Preheat your oven to 375 degrees Fahrenheit.
• In a medium size bowl mix together the banana, eggs, vanilla, cinnamon, baking soda, salt, and flour. 
• Pour the batter onto the parchment lined, greased jelly roll pan.
• Bake for 10-12 min or until golden brown.
• After removing the cake from the oven let it cool for 5 minutes.
After the 5 minutes, I pull the cake out of the pan by pulling the parchment paper and then flip the cake over onto the jelly roll pan and remove the parchment paper. 
• Next I give the parchment paper a good dusting of powdered sugar to help the cake not stick. Then carefully place the cake back onto the sugar coated parchment paper and roll up into a log. 
• Let it cool completely.
• With a handheld mixer beat together the cream cheese, butter, and powdered sugar until smooth. 
• Once the cake is cooled off unroll the cake and spread on the cream cheese filling. Then roll it back into a log.
• Cover and refrigerate before dusting with powdered sugar, slice and enjoy.

Dandelion Carrot Cake 🥕 You can bake these in a r Dandelion Carrot Cake 🥕

You can bake these in a regular  size muffin tin. If you use terracotta pots just make sure they are seasoned. 
Ingredients:
2 c peeled and grated carrots
1 c all-purpose flour
3/4th c granulated sugar
1/2 c dandelion flower petals
1/2 c vegetable oil
2 eggs
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp baking powder
1/4th tsp sea salt
Cream Cheese Frosting:
2 c powdered sugar
4 oz cream cheese softened
3 TB butter softened
1 tsp vanilla
dandelion flower petals for decorating (optional)
Instructions:
 After you have picked your dandelions, remove the petals from the head with kitchen sheers. We will only be using the petals for this recipe. Soak in a mix of 3 parts water and 1 part vinegar for 5-10 minutes. Drain of the water, rinse and dab dry with a paper towel. I even gave mine a gentle squeeze before laying out on a paper towel to air dry. 
After you have prepared your dandelion petals. Preheat your oven to 350 degrees. I lined 10 preseasoned 2-inch clay flower pots and 1 preseasoned 3.5-inch clay terracotta pot with parchment paper and filled them 1/4th inch from the top. This recipe is also enough to fill one regular 12-cup muffin pan lined with paper.
In a mixing bowl cream together the eggs, sugar, and oil with a wire whisk or hand mixer.
Add in the grated carrots and the rest of the dry ingredients. Folding in the dandelion petals at the very end.
Use a 1/3rd cup measure to scoop the batter into the muffin tins or fill the preseasoned flower pots 3/4th full. Bake for 20-25 minutes or until they have formed a nice dome on the top and a toothpick comes out clean.
Allow them to completely cool before frosting.
To make the frosting with a hand held mixer cream together the softened cream cheese, butter, and vanilla. Gradually mix in the powdered sugar until its thick enough to keep its shape when decorating.

Who else loves getting corndogs at the fair?
Also known as dippy dogs these are an American classic that were first made in Texas by an immigrant family from Germany.

Sourdough Corndog 
Ingredients: 
10-12 hot dogs
2 c sourdough discard I used unfed sourdough starter right out of the refrigerator.
1 c yellow cornmeal
1/2 c milk may need more for thinning the batter depending on the sourdough hydration. 
1/4 c sugar
3 Tb honey
1/2 tsp sea salt
Peanut oil for frying oil enough to fill your pan 2-3 inches deep.
Cornstarch For coating hot dogs.

Heat oil to 350 degrees Fahrenheit over medium heat.

Prepare the hot dogs by patting them dry with a paper towel, skewering them on a popsicle/kabob stick, and rolling them in cornstarch. This will help the batter stick to the hot dog.

Mix the cornmeal, salt, and sugar then add in the sourdough starter, and honey. Slowly pour in the milk a little at a time to watch for pancake batter like consistency. You want the batter thick enough to coat the hot dog hut also thin enough to run off the hot dog. If you get the batter to thin add a little flour to thicken.

Fill a tall drinking glass or container with the batter. Dip the hot dogs into the batter to coat and carefully set them in the hot oil. Fry them until they are golden brown, roughly 30 seconds on each side. Remove them from the oil and let them sit on a paper towel for a few seconds to soak up any extra grease and serve immediately with your favorite dipping sauces.
